History

From among the most typical places of the old Madrid, stands out the Arco de Cuchilleros. Situated in one of the angles of Plaza Mayor, and built by the famous Gómez de Mora.


Descending the steps leading to the street of the same name Cuchilleros, called by those who worked as cutlers, we find “ Las Cuevas de Luis Candelas ”. A place, where a typical inn existed, and was visited at the beginning of 1800, by the most typical people of Madrid of the Austrias.


One of these, was the famous bandit Luis Candelas. A young man with a dual personality: Luis Candelas Cagigal , a bandit with a particular way of dressing - a turquoise blue waistcoat, Mahon trousers, a cummerbund and andalusian hat-, and Mr. Luis Álvarez de Cobos, a rich landowner in Peru, who helped the poor with stolen money.


The bandit had in the caves of the inn, a very appreciated hideout. He met there with his “squad” to celebrate the done blows with fortune and to prepare the next. They used its narrow and gloomy passages, and several exits, under the Plaza Mayor, to confuse their pursuers.


In 1827 he married Manuela Sánchez in the Church of San Cayetano, and moved to Zamora, where he lived some time until he decided to return to the capital.

He was imprisoned by some robberies and its slip prayed thus:

“ Luis Candelas Cagigal, 28 years, married, natural of Madrid, with residence in Cuchilleros 1, professional thief, stature to regulate, black hair without hairnet, eyes to the hair, large mouth with jaw prominent, well formed and strong “.

At the beginning of December of 1836, he was sentenced to death stick vile, on the outskirts of the gates of Toledo in Madrid, in the presence of the town.

His last words were: “BE HAPPY, HOMELAND OF MINE” ‍

Today, the restaurant “Las Cuevas de Luis Candelas”, - one of the oldest in Madrid - , conserves the singularity, and the character of the 19 th century, holding the secrets that were kept long ago by the famous bandit, for the enjoyment of all who visit it.

This book pays tribute to the historical figure of Luis Candelas, the most famous bandit in Madrid, and to Mr. Félix Colomo Díaz, famed bullfighter and founder of this restaurant.
In its pages you will discover the secrets and mysteries of the Candela’s time, and the stories and anecdotes from all those people and celebrities from the worlds of culture, art, politics, sports, etc., who have been to the restaurant during these years.

"Las Cuevas de Luis Candelas" is considered one of the most traditional restaurants of Madrid. Anyone who visits us is received by the Candelas own, and staffed by personnel characterized the typical clothes that used this famous bandit in the S. XIX. It has several rooms that reflect different environments and move their customers to another era, offering quality service. On the terrace you can taste the cuisine in Madrid, next to Arco de Cuchilleros.

"Las Cuevas de Luis Candelas" has recovered the uses and customs of Madrid that give substance to its cooking traditions.There are several specialties offered, including its famous roast piglet  in Arabic oven with oak wood, the Ox Tail and  the typical desserts of Madrid.
